Stir-fry style dishes are something I do a lot of since work schedules end later in our house and dinner isn't eaten until late.  Vegetables and a lean protein is the best way to end the evening.  Think "building blocks," "repair," "recovery" and "SIMPLE" when it comes...

This one is a slow cooker recipe and one of my family favorites!  SUPER easy and ends up being a fall back on nights that I have a lot of sessions or office work.
