The Brit's "Every'fing Paleo" Chili

The Brit (AKA Hubby) made this one night while I was working late and it was great to come home to an already-made dinner.  In our house, The Brit is not The Chef although he can certainly prep chef like a pro, make a mean omelet as well as a couple of basic recipes...Crock-Pot to the rescue!  He dumped a bunch of things he though would be good in chili, set it for 4 hours (high) and called it "Every'fing Paleo Chili."  Here are the ingredients that he shared with me/remembered:



*1 pound grass-fed organic ground beef

*3-4 slices bacon (get the least processed bacon you can find), cut into small squares

*1 medium sweet onion, diced

*4 cloves of garlic, diced or pressed

*1 bell pepper either red or yellow, diced

*2 cans of organic tomato sauce

*1/4 cup (a man-sized sprinkle) organic crumbled goat cheese (not Paleo, but whatever.  It adds a really good taste to the chili, especially since we don't use regular dairy products)

*Some cayenne pepper and red chili flakes (this made it very spicy so he might have put in a lot! You can omit this or only put a spinkle in if you don't want it too spicy)

*1/2 teaspoon cumin

*1/2 teaspoon chili powder



1.  In a medium skillet, lightly brown the ground beef and the small squares of bacon so it's mostly cooked.

2.  Add all ingredients, including meat, to the crock-pot and set to whatever time and temperature that works for your schedule.  We cooked ours on high/4 hours and it self-times to turn to a "warm" temperature when 4 hours are up so the contents don't overcook.
