RockIt Salad!

One of my favorite quick-and-easy lunches that I can make and take or enjoy at home, The RockIt Salad features the sharp, peppery flavors of arugula, also known as rocket.  Get it?  Rocket, RockIt?  See what I did there?

 

*Sigh*

Anyhoodle, here's how I do it:

 

Organic arugula 
Organic romaine hearts
Chicken slices (I use my pre-made chicken that I prep every week)
Crumbled organic goat cheese (omit for vegans or paleo eating)
Olive oil
Lemon juice (just a quarter of a capful, should be a little sprinkle)
Balsamic vinegar (just a sprinkle!  Approximately 1/2 teaspoon)
Fresh cracked black pepper 
Your choice of toppings: dried cranberries, chia seeds, flaxseed, hemp seeds, sunflower seeds, crushed walnuts
