Garlic Chicken and Broccoli Sauté
I always like to tell people that all they need for dinner is lean protein and lots of vegetables in order to start the rebuild and repair process that happens while we sleep. For so long, we've been attached to the idea that we have to have a meal with a few sides or something large and heavy to finish out our night and that's not true. Your schedule and your body will thank you for keeping it simple.
I think this is as simple as it can get: broccoli and lean chicken breast strips sauteed in a little coconut oil and garlic. I always try to have my recipes be vegan friendly for my herbivore friends--just substitute tofu!
If you make enough, you can easily take this as a lunch the next day.
2 tablespoons coconut oil
2 fresh free-range organic chicken breast, cut into strips or use pre-cooked chicken strips from my meal prep recipe
16 oz/1 pound/1 package Broccoli Florets, fresh or frozen
1 1/2 teaspoons crushed garlic or 4 large cloves, minced
1 teaspoon dried basil--use fresh if you have it and put as much as you like in there! I love basil!
1/2 teaspoon 21 Seasonings Salute blend from Trader Joe's (optional, I just like to put it in everything)
Squeeze of large lemon slice
In a large skillet, heat the coconut oil over medium heat and add the garlic and chicken if uncooked.
If using pre-cooked chicken, add the broccoli first.
After letting the broccoli soften for about 4 to 5 minutes, or the chicken cook through, add all remaining ingredients except for the lemon.
Once all ingredients are cooked through, squeeze lemon over the sauteed mix and serve!
Serves 2 to 4 people.
